Sunday:
Hearty Autumn/Winter Beef Stew over Rice

3/4 cup KRAFT Zesty Italian Dressing
2 lb. beef for stew, such as chuck roast, cut into 1-inch chunks
6 slices OSCAR MAYER Bacon, chopped
3 cups sliced fresh mushrooms
1 large onion, chopped
6 carrots, sliced
1-1/2 lb. potatoes, peeled, cut into large chunks
1 can (14-1/2 oz.) stewed tomatoes, undrained
1 can (14-1/2 oz.) beef broth

POUR dressing over beef in shallow glass dish. Refrigerate 30 min. to marinate. Meanwhile, cook bacon in large saucepan on medium heat 5 min. or until crisp, stirring occasionally. Remove bacon from saucepan; discard drippings. Drain bacon on paper towels.
ADD mushrooms and onions to saucepan; cook on medium-high heat 10 min., stirring occasionally. Remove beef from marinade; discard marinade. Add beef, carrots, potatoes, tomatoes, broth and bacon to saucepan; stir.
BRING to boil, stirring occasionally; cover. Simmer on low heat 1 hour 30 min. or until meat is done and sauce is thickened, stirring occasionally and removing the lid for the last 15 min..

Tuesday:
Baked Ziti w/Eggplant Parmesan

I am using a frozen store bought entree to supplement the Eggplant Parmesan I made about a month ago. Unfortunately I do not have the recipe from then but my daughters ate it up as they just thought it was "spaghetti stuff". They didn't even know that there was no pasta but only veggies.

Wednesday:
Beef Stroganoff over Buttered Noodles

2 (8 ounce) cans cream of mushroom soup
1 (1 1/8 ounce) package onion soup mix
1 lb stew meat OR Beef Chuck Steak (cubed)
8-16 oz of sour cream (depends on how "sour" you want it)

Egg Noodles

Combine and cook in crock pot for 8 hours. Then just before serving add sour cream to crock pot and stir. Serve mixtrue over buttered egg noodles (flat wide noodles or Reams frozen egg noodles are even better).

Thursday:
Chicken & Rice Casserole w/veggies

Friday:
Spaghetti w/meat sauce

Saturday:
Hamburger Vegetable Soup

I cooked, we ate the Autumn/Winter Beef Stew over Rice. My family enjoyed it and will enjoy the leftovers in a few days. I plan to use the Stroganoff over buttered noodles recipe soon.

Beef stew is absolutely one of my all-time favorites, makes me miss my mom to read this. No,she's not dead, she's in Canada and I way down here in Texas.
