Amish Friendship Bread Recipe

I will be making Variations 9: Blueberry Pecan (I will add 1/2 cup of pecans to this variation), Variation 11 Banana Creme, and Variation 17: Zucchini Pineapple or 18: Zucchini Chocolate Chip or 19: Chocolate Zucchini.

To 1 cup Starter, add:
1 cup oil (I use Organic Virgin Coconut Oil)
4 eggs (Free Range is the best)
1 cup sugar (Sucanat is good or use Organic Sugar)
2 tsp. vanilla (I use Simply Organic brand)
1 large instant pudding (try and find an organic brand if you can)
2 cups flour (I use Bob Red Mill's Whole Wheat Pastry Flour)
1 tsp. baking powder (Bro Red Mill's Aluminum free)
1 tsp. baking soda (Bro Red Mill's Aluminum free)

Use Variations as previously posted or to make Traditional add:
2 tsp. cinnamon...1 cup raisins...1 cup chopped nuts

To the remaining batter, add oil, eggs, sugar, vanilla & pudding mix. Blend well.

Add the combined dry ingredients, nuts & raisins, mix well.

Put into 2 well greased 9x5 loaf pans that have been greased (if making Traditional then sprinkle also with cinnamon & sugar).

Bake 60-70 minutes at 325 degrees F.

NOTE: Cut the fat by using Egg Beaters in place of the eggs & applesauce for all or part of the oil.
