Our Breakfast This Morning


Light and Fluffy Whole Wheat Pancakes

Dry Ingredients:
2 cups of whole wheat pastry flour (+/-)
1/3 cup of sugar (organic, sucanat, brown, white - whatevery you have)
1/2 tsp kosher salt
1 tsp baking powder
1/2 tsp baking soda

Wet Ingredients:
2 1/2 cups of buttermilk (or kefir, or plain milk or a mixture)
2 lg eggs
2 tsp of Real Vanilla
3-4 Tbsp of melted Organic Virgin Coconut Oil

OPTIONAL:  1/2 cup of blueberries OR 1/2 cup of chocolate chips OR 1/2 of nuts OR your favorite addition to pancakes
  1. Combine all wet ingredients (be forewarned that the coconut oil will solidify once added to cold ingredients so you may want to warm up wet ingredients before adding coconut oil).
  2. Add sugar, salt, then baking powder and baking soda and mix well
  3. Now slowly add 1/4 cup of flour a little bit at a time until you get a the right balance of batter (not too liquid and not too thick).  Now add your Optional ingredient and gently stir.
  4. Pour 1/8 cup of batter onto a hot griddle and flip when bubbles appear and edges are slightly dry.
Serve with Pure Maple Syrup and ENJOY!  We sure did!  It was absolutely delicious as I received a freshly made 1/2 gallon jug of Ohio Maple Syrup (see pic) from a fellow Homeschool mom, Tammy at co-op yesterday!  Her boys (and hubby) sure did a fine job!  I know where I'm gonna get my maple syrup from, for now on!
