Pumpkin Breakfast Cookies
I have been wanting a quick but healthy breakfast on the go and thought why not oatmeal cookies. I mean really, what is so different about eating a bowl of oatmeal vs. a big oatmeal cookie? So I was looking at a new blog today, American Homemaker and she had a good recipe for a Breakfast Cookie Bar and I thought I would try it and make a bit of a variation to liven things up a bit for the Autumn Season. Here is here recipe below and my variation is below hers.
Breakfast Cookie Bars
1/2 c. brown sugar
1/2 c. sugar
2 eggs
1 tsp soda
1/2 tsp salt
2 c. oats
1 c. whole wheat flour
1 c. pearsauce or applesauce
1 tsp pumpkin pie spice
3/4 c. mini chocolate chips
Mix everything together well. Pour into a 9x13 pan. Bake at 350 for about 30 minutes.
Pumpkin Breakfast Cookies
1/2 c. brown sugar
1/2 c. sugar
2 eggs
1 tsp soda
1/2 tsp salt
2 c. oats
1 c. whole wheat flour
1 c. pureed pumpkin (homemade or canned)
1 tsp pumpkin pie spice
3/4 c. cinnamon chips or butterscotch chips (both are DELICIOUS!)
Mix everything together well. Drop by the spoonful on a greased cookie sheet and bake for 12-15 minutes (less or more depending on your oven).
