Saurkraut Soup Recipe - delicious!
given to me by my good friend Mary W.
(my version adapted from hers is below)

1 lb of smoked sausage
1 onion
3-4 big carrots sliced/chopped (or 1 - 1 1/2 cups of chopped baby carrots)
3 med potatoes
1 can of stewed tomatoes
1 can of saurkraut (drained and rinsed)
1 can of tomato juice

Cook everything except saurkraut in chicken broth until potatoes and carrots are done. Then add saurkraut and cook 1/2 hour longer. Serve with bread of your choice.

Saurkraut Soup
My version

1 lb of smoked sausage
1 can of stewed tomatoes
1 can of tomato juice
1/4 cup of dehydrated onion flakes
Leftover potaotes and carrots from "Fautisserie chicken w/potatoes & carrots"
Leftover undrained saurkraut from "Pork Roast w/saurkraut"

Place everything in the crockpot and cook on low for 4-6 hours or high 2-4 hours. Serve with bread of choice (we will be using leftover Panera rye bread)
